Almond Macaroons decorated with Cocoa Powder

Baking traditional German Christmas cookies is one of the best things and almond macaroons are an alltime favorite of ours. And they are quite easy to make. In 30min you will have a wonderfully smelling house and cookies that are oh so good. Try them out! German Christmas Cookies: Almond Macaroons

Basically all you need is egg whites, powdered sugar, finely ground almonds and vanilla. I use cocoa powder for decoration. You can melt chocolate as well and use it to decorate your macaroons. One thing I found very useful is the baking wafer. You can buy them usually in packs of 50 or 100. They help to keep the macaroons in shape and they won’t stick either.

When I was little the baking wafers were also sold in sheets. My grandmother told me that it was special paper and one could eat it. I couldn’t believe it. She took a pencil and wrote my name on the paper (wafer) and ate it. I was so baffled and made my grandmother open her mouth and checked if she really swallowed it. She had 🙂 This was my first introduction to baking wafers.

When you make the macaroons make sure that the egg whites are beaten really stiff bevore you add the powdered sugar and the ground almonds.

Then you slowly add the powdered sugar & vanilla and keep beating the mixture. After that fold in the almonds. You don’t want to blend them in, because the dough will get much softer.

Then you prep the baking tray with baking paper and the little round wafers.

With a teaspoon put little heaps onto the wafers and bake them at 300°F for 15-17min. Make sure they don’t get too brown.

The macaroons will be still soft when you pull them out. Let them cool down.

Ingredients

  • 3 egg whites
  • 1+3/4 cup powdered sugar
  • 2+1/2 cup finely ground almonds
  • 1/2 tsp vanilla use the kind you like best e.g. vanilla sugar
  • 1-2 tsp cocoa powder for decoration
  • baking wafers

Instructions

  • Seperate the eggs and beat the egg whites very stiff. Slowly add powdered sugar and vanilla and keep blending. Add almonds and fold them in. While you do that, heat the oven to 300°F.
  • Prep baking tray with baking paper and set baking wafers on it. Put about a heaping teaspoon of dough on each wafer. It shouldn't cover the whole wafer, since it will spread out a little.
  • Bake for 15-17min on middle rack. Let them cool and decorate with cocoa powder.
