Hussar Crullers / Husarenkrapfen


These are one of my favorite German christmas cookies. They look really great and are sooo yummy, if you like hazelnuts. They are also a great gift when packaged in clear foil bags with a big ribbon or in a christmas tin. Try them out. You won’t regret it.


Hussar Crullers / Husarenkrapfen

This is a traditional German Christmas cookie recipe. Very decorative and very delicious

Ingredients

  • 1 1/4 cup flour all purpose
  • 1/2 + 2tbsp cup ground hazelnuts
  • 1/2 cup sugar brown or white
  • 1/2 + 2tbsp cup butter or margarine
  • 2 eggyokes
  • 1/2 tsp cinnamon
  • 150 g cherry jelly or jam any red jam works, no pieces though
  • 2 tbsp powdered sugar for decoration afterwards

Instructions

  • Mix together the flour, hazelnuts and suger in a big bowl. Then add the butter or margarine in bigger flakes or spoonfuls. Add the eggyokes and the cinnamon in the center and use the kneading hook to mix. Afterwards wrap dough in celluphane foil and chill for about an hour. You can forgo this step. The dough will be a little softer then when you work with it. I have to admit that I quite often skip the chilling, because I usually make several different types of cookies at the same time to use up the extra egg whites.
  • Heat the oven to 175°C / 350°F. Now flour your hands and shape balls the size of about a walnut and place them on a baking tray covered with baking paper. Use the back end of a cooking spoon to make little round indentations in each ball. Warm up the jelly/jam and with a teaspoon and fill the indentations. Now bake them (middle rack) for 15-20min.
  • After letting them cool a little sprinkle with powdered sugar. On the jelly spots the sugar will become clear after a while and give them the festive look. Enjoy!
