Tortelloni al Verde with Caprese Salad

Pasta is such great meal. Very versatile and easy to make. We often make pasta in a pinch or as a planned meal. This version is so easy to make and the result is great. Try it out. It only takes about 20min.

For the pasta I used fresh tortelloni. But you can actually use any kind. Usually 1/2 lb is enough for two people, but if you don’t have a salad you might want to use more. This is the kind I used for this meal.

Tortelloni al Verde with Caprese Salad

A quickly made pasta meal that tastes great.

Ingredients

  • 1 pck fresh tortelloni 1/2 lb
  • 1 onion
  • 1-2 cloves garlic
  • 1 cup frozen spinach, thawed & drained
  • 1-2 cup milk cream can be used as well
  • 2-3 tbsp olive oil
  • salt according to taste
  • pepper according to taste

Caprese Salad

  • 3 tomatos
  • 1 mozzarella ball
  • basil leafes
  • olive oil
  • black olives optional
  • salt

Instructions

  • Mince the onion and the garlic and lightly brown them in some olive oil. Add the thawed and drained of water (pressed out) spinach. Fry for a few minutes. Add salt and pepper according to taste.
  • Add the milk to make it saucy.
  • While you make the sauce boil water for the pasta. Cook pasta according to directions.
  • After washing the tomatos cut them into slices. Cut mozzarella into slices. Arrange on a dish alternating tomato and mozzarella. Drip olive oil onto everything and salt according to taste. Decorate with basil leafes and olives.
  • Put the pasta on plates and add sauce. Serve right away with the caprese.
