Apple Pie Cake

Apple Pie Cake is a mix of traditional apple pie and a normal white cake. And it is super über yummy. It won’t appeal to fans of drier cakes, but if you love moist pies and cakes (and caramel) then this is the thing for you. My family says it is one of the best cakes I’ve ever made. So of course I’m not going to keep this recipe from you. Hopefully it will make you very happy.

Making Apple Pie Cake

You start out with making the apple pie filling. You need about 6 apples, butter, brown sugar, spices and water. Actually you can prepare the filling any time before making the cake. In a jar stored in the fridge it will last for several days no problem.

Start with peeling, coring and cutting the apples into cubes. Slices are also possible, but I think cubes work better here. Drizzle some lime or lemmon juice on them to prevent them from browning.

Now mix the cornstarch with the tablespoons of water in a glas and set aside. Melt the butter in a deeper pot and then add the sugar. Stir well. Next add the spices, the dissolved cornstarch and the water and again stir well. Now add the apple cubes and bring the mixture toa boil over medium heat. I know medium heat takes a while, but that way you avoid burning. But you still have to keep on stirring. Once it boils, lower the heat and let the mixture simmer until the apples are soft. If the apples are super juicy you might want to add a little more starch (dissolved) to thicken it up a bit. But by no means should it be as thick as pudding. Once finished, set aside.

With the filling ready we can start to make the cake now. Preheat the oven to 350°F. Then weigh out your ingredients. In a bowl mix together all the dry ingredients: flour, sugar, baking powder & soda and the spices. Then melt the butter and add it together with the milk to the dry ingredients. Mix well. The dough will be similar to a crumb cake dough.

Take half of the dough and put it in a 9×13 pan. Flatten it evenly. Now bake this part only in the preheated oven for 10min. This makes the bottom a little bit like graham crackers and keeps the moistness inside the cake.

Once the bottom part is done baking, remove it from the oven and top it with the apple pie filling. Then crumble the other half of the dough on top. You can press it down very lightly.

Now bake the cake in the still preheated oven for another 30min or untilit is golden brown. Remove the cake from the oven and let it cool down.

Ingredients

Apple Pie Filling

  • 4-6 apples to make ca 4 cups cubed apples
  • 1 cup brown sugar
  • 1 1/4 cup water
  • 1 tbsp butter unsalted
  • 1 tsp ground cinnamon
  • 1/8 tsp ground cloves
  • 1/8 tsp nutmeg optional
  • 3 tbsp cornstarch
  • 3 tbsp water for dissolving the cornstarch

Cake

  • 2 1/2 cups flour
  • 1 1/2 cups brown sugar
  • 1/2 cup melted butter
  • 1/3 cup milk
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp groung cinnamon Ceylon cinnamon
  • 1/4 tsp ground ginger
  • 1/8 tsp nutmeg
  • 1/8 tsp allspice
  • 1-2 tsp vanilla

Instructions

Pie Filling

  • Peel and core the apples and cut them into cubes, about 4 cups. Drizzle the apple cubes with lime or lemon juice to prevent them turning brown.
  • Mix the cornstarch in a glas with the water.
  • Melt the butter in a deeper pot and add the sugar, the spices, the dissolved cornstarch and the water. Stir well.
  • Now add the apple cubes and bring the mixture to a boil over medium heat. Stir regularly.
  • Lower the heat and let the mixture simmer until the apples are soft. Keep stirring regularly.
  • Put mixture aside and let it cool.

Cake

  • In a bowl mix together all the dry ingredients with the spices and add the melted butter and milk. Mix well.
  • Take half the dough and put it in a 9×13 pan. Flatten it evenly.
  • Bake in preheated oven 350°F for 10min or until golden brown.
  • Remove from oven and top with apple pie filling.
  • Crumble the remaining dough on top and bake for 30min or until golden brown.
