As it so often goes when you get a hankering you want to satisfy it quickly. Well, this Best Brownie Cake Ever will defenitely hit the spot. I am personally not a big chocolate lover. I like dark chocolate sometimes, but over all I prefer salty snacks, if any at all. But even I will eat this brownie cake. My family however is crazy about it.

The recipe is quite simple and it only takes 10min to prepare and 20min in the oven. How can you beat that? Plus warm Brownie Cake is just heaven. And it doesn’t even contain melted chocolate or syrup or anything like that, despite its gooey fudgyness, which makes it actually low cal (for brownies). Time to try it out.

So lets see what we need. Eggs, brown sugar, hot melted butter, real cocoa powder, flour, 1 tbs oil, 2 tsp vanilla and as optional ingredients nuts and chocolate chunks.

Heat the butter and add the 1 tbs of oil (I prefer coconut oil), sugar and vanilla and stir well. The little bit of oil makes the top of the cake glossy. Then beat the eggs and add the butter, oil, sugar mix. Blend until the color becomes lighter. Now sift in the cocoa powder and flour, add the chocolate chunks and nuts, if you so desire, and only then mix everything together. It is best not to use the blender as it tends to be overmixed afterwards. So stir by hand until everything is just mixed. I promise it won’t take long.

Prepare your baking tin with baking paper. When the batter is ready pour it into a square baking tin, 9×9. If you don’t have one, take a bigger tin and section off one part e.g. with tin foil. Then use baking paper to cover the main part in which you pour the batter.

If you like sprinkle some chocolate on top. It looks quite nice afterwards. You can also decorate the brownie cake with powdered sugar. But it needs to cool a little for that. For Christmas I put stars on it and for Easter bunnies. You can use cookie cutters for the shapes.

Next put the cake in the preheated oven at 350°F. But not more than 20min! Otherwise the center gets too done and you loose the ooey-gooey-ness.

Ingredients

  • 2 eggs

  • 1/2 cup melted butter
  • 1 tbsp coconut oil
  • 1/2 cup flour
  • 1/2 cup cocoa powder
  • 2 tsp vanilla
  • 1 handful chocolate chunks optional
  • 1 handful nuts optional
