This wonderful spicy Indian Lamb Goulash is very much worth making it. And you don’t even have to make the spice mix yourself, but you can, if you would like. I use a spice paste for Indian Tikka Masala and add a bit of red curry paste. That makes this meal really easy to make. Just give it a try.

Originally I used this as a winter meal, because of the spices. But my family loves it so much that we actually eat it all throughout the year. Okay, maybe not on the hottest summer days, but almost 🙂

Indian Lamb Goulash with Rice

I use a pressure cooker to make it and I highly recommend using one. The meat gets oh so tender and the actual cooking time is reduced to about 20min. You have never made any goulash this fast! So if you like Indian spices try this one out and serve it with rice or pasta.

And occasionally one runs out of things. Here you see what happens when you are out of rice. I used bulgur. It has a similar consistancy and a great taste. It is best to cook the bulgur in veggi broth, but salted water is fine, too.

Ingredients

  • 1 1/2 – 2 pound lamb steak, medallions or lamb goulash any type works with the pressure cooker, I buy it frozen
  • 1 big onion
  • 1-2 cloves garlic
  • 1 tsp red curry paste you can use more or less depending on how spicy you like it
  • 1 can tomatoes 14 ounces
  • 4 big carrots cut into chunks
  • 1 cup cherry tomatoes optional
  • salt according to taste
  • 1 pck Tikka Masala paste about 3 tbsp
  • coconut oil
  • 1 1/2 cups rice or bulgur pasta works as well

Instructions

  • Mince the onion and garlic and brown them in some coconut oil. Add red curry and Tikka Masala paste and and stir well. Add lamb, carrots and tomatoes (can + fresh) and maybe a little water. Cook in pressure cooker for 20min.
  • While the goulash is cooking make the rice or nudels and keep warm. Once the cooking time is done and you have opened the pressure cooker, check if you need more liquid (= sauce) and add water. If you like the sauce a little thicker add a little cornflour. Enjoy!
