The other day I was so in the mood for baking. Looking around in my kitchen what ingredients I could use I realized I still had some fruit that needed to be eaten. The bananas were already soft and there were a few blueberries left. I also had a pack of dark chocolate chunks and a special chocolate and cinnamon frosting. It became clear to me that I had to make a Banana Chocolate Cake with Blueberries. 🙂

Banana Chocolate Cake with little Stars on Top

The banana chocolate cake with blueberries is quite easy to make. Basically you make cake batter and add ripe bananas, blueberries and dark chocolate chunks. Afterwards the cake gets covered in chocolate-cinnamon frosting. A wonderful treat especially for chocolate lovers.

The best bananas to use are the one you wouldn’t eat any more, because they are too soft. Then they are perfect for a cake! And the best thing is they keep the cake wonderfully moist.

So you beat the eggs fluffy and add the brown sugar and margarine. Then you add the flour, baking powder and soda as well as some vanilla flavoring. I used my favorite vanilla from Pickerd.

The batter will be a little thick, but don’t worry. There are no banans in it yet. You add them now and mix everything well. Then stir in the chocolate chunks and last come the blueberries. Pour the batter into a baking pan and bake at 350°F/175°C.

After about 30min your cake is ready to come out. Check if an inserted knife comes out clean. Otherwise keep it in the oven a little longer.

After letting the cake cool down a little it is time to add the frosting. I used dark chocolate couverture. It is a special chocolate for covering cakes. Basically a big fat piece of chocolate. I melted it down in the microwave oven and poured it over the cake. Then I took a small bag of chocolate-cinnamon frosting (Dr.Oetker Duo Glasur Zimt-Kakao) and added that on top.

In the end I sprinkled some sugar stars over the cake. I still had them left over from my Christmas baking and I thought it gives the cake a winter look.

  • 2 cups flour
  • 3/4 cups brown sugar
  • 1/2 cups margarine

  • 1 pck dark chocolate couverture / frosting
  • 1 bag chocolate-cinnamon frosting e.g. Dr.Oetker Duo Glasur Zimt-Kakao
  • 1 pinch salt

Instructions

  • Beat the eggs fluffy and add the brown sugar and margarine.
