What to make with leftover rolls – Panini al Forno

When you make those yummy breakfast rolls, or Brötchen as they are called in German, it might actually happen that there are some left over. I have had that happen plenty of times. Usually I would freeze and use them on a lazy weekend. But they can also serve as a wonderful lunch or supper. So what to make with leftover rolls – Panini al Forno of course, which is Italian for oven sandwiches. So here we go.

Heat your oven to 350°F/175°C and prepare baking tray with baking paper. If you like onions on your sandwiches, cut them into rings and caramelize them in the pan. It adds extra time, but it is totally worth it.

Cut the breakfast rolls in half and set on prepped tray. Spread mustard and pesto (and whatever else you like) on all halfs.

Now put the cold cut on all the halfs. Sometimes I fry up the cold cut as well before putting it on the sandwiches. Especially with salami it turns out really yummy. But if you cut or rip the chickenbreast cold cut into pieces and fry it with a little bbq-sauce, it is also very yummy. If you have a chance to get Finocchio Salami (salami with fennel) defenitely use that. It is very Tuscan and itdoesn’thave to be fried. Top with your preferred cheeses and bake in oven for 20min.

Ingredients

  • 4-8 breakfast rolls amount depends on how many people you want to feed, I usually take 2 rolls per person
  • slices of different cold cut e.g. salami, chicken breast, ham etc
  • cheese any kind
  • pesto
  • mustard
  • garlic spread optional
  • 1-2 onions optional
