Here we go again Italian style – Tortelloni al Verde with Caprese Salad

Well, as you all probably noticed we love Italy and Italian food. And it is not difficult to make. Often Italian dinners are pasta, salad and some bread – usually served in reverse order. In our experience Italians like to have a first course such as salad and bread, then the main course and then desert and or coffee. We don’t eat deserts that much so I condensed the whole meal into the main course served with salad as a side dish. Here I used Caprese salad, tomatos, mozzarella and (optional) black olives. For the tortelloni I made a green (verde in Italian) sauce with spinach. A great look and a wonderful taste. And the best part is, you can have it ready in about 20min. So light up those candles, open the wine and get ready to cook.
