Asian Chicken Bowls
We really enjoy Asian food and these Asian Chicken Bowls are the best. You can serve them in just 20min or less. And they are not very high in calories either. Just put on that rice and get ready for this yummy treat perfect for any time of the year.
I make the chicken bowls usually when we don’t want to cook for along time. The nice thing is you can really add anything you like to make them individual. I keep veggies in the freezer which can be added easily. But even with just the basics it tastes great. Just make sure you always have some soy and fish sauce ready which is easy, because they keep for a long time. Of course, if you are as crazy as we are about these yummy chicken bowls the sauces might not last that long 🙂

Chicken bowls are wonderfully light and easy to make. It hardly takes longer than the rice needs to cook. I alway have a pack of cured chicken or chicken-breast cold cut in the fridge so I can whip this up in a pinch. And if you are in the mood you can add any type of vegetable you like. I some-times add some frozen veggie-mixes. It is very practical to have a small selection in the freezer. The basic recipe however only uses chicken, onions, garlic, red chili pepper (medium spicy) and some basil.
First you have to make the sauce. For that take a bowl and mix together the broth, soy sauce, fish sauce, brown sugar and the vinegar and set aside. If possible don’t leave out the fish sauce. It really give the meal a great taste. I don’t really like it pure either, but used as a spice it is great.
Now it is time to get the rice ready. While the rice is cooking, heat the coconut oil and brown the onions and garlic lightly. Add the chili pepper and the chicken and also brown them lightly. If you add extra veggies it is best to do that before the chicken. Then add the sauce and let it cook down a little. That will make the sauce thicken slightly. As the final step add the basil and let it cook for a couple of minutes. Serve with the rice right away.

Asian Chicken Bowls
Ingredients
- 1 lb cured or pulled chicken or cold cut ground or cut into smaller pieces, you can use fresh, but the cooking time will be longer
- 1 1/2 cup rice I like Basmati the best
- 2 red onions
- 2-3 cloves garlic
- 1 red chili pepper, medium spicy
- 1/8 cup frozen basil fresh is great, too, you need 1-1 1/2 cups
- frozen veggies optional
- 2 tbsp oil coconut oil works great for this
Sauce
- 1 cup chicken broth or veggie broth
- 1/3 cup soy sauce
- 2 tbsp fish sauce it is worth using it
- 3 tbsp brown sugar
- 3 tblsp rice or white vinegar
Instructions
